Abstract: With the focus on the fat intake from school lunch services, the ratio of fat-derived energy and the menus as it ought to be were studied. The menus of ten schools were analyzed and the following results were obtained. Many schools presented a high average of the ratio of fat-derived energy. Half of the schools marked 25.4% or less for the "Japanese-style meal" menus while many marked 32.1% on an average for the "other type" menus. At all of the schools, the ratio with the "deep-fried food included" menus was higher than that with the "no deep-fried food included" menus, 33.0% for the former against 28.5% for the latter on average of the ten schools. At all of the schools, the fat-derived energy ratio was in the range from 22.2% to 29.9% with the "rice based" menus, and 32.3% to nearly 40% with the "other type" menus.
