Abstract: The influence of the heating treatment after the freezing storage on the spore forming and enterotoxin producing abilities of the culture solutions of Clostridium perfringens NCTC 8798 has been studied. 1) The spore forming ability of the strain NCTC 8798 was increased more definitely by the heating (75℃, 20min.) after the freezing storage (-20° or -30℃, 1~6 days) of the cooked meat culture (37℃, 3 days) solutions than by the only heating of the culture solutions. 2) The enterotoxin producing, spore forming and heat-resistant (100℃, 10min.) spore forming abilities after the heating of the culture solutions which were stored at -20℃ for 6 days were higher than those of the culture solutions which were stored at -20℃ for one day. 3) The spore forming ability which was elicited by the heating after the freezing storage (-20℃, 5 days) was maximum when the freezing (-20℃) - thawing (37℃) was applied one time to the culture solutions before the freezing storage, and the ability diminished when the freezing - thawing was repeated 2 and 4 times. / 凍結保存に続く加熱処理がウェルシュ菌NCTC 8798の胞子形成能およびエンテロトキシン産生能におよぼす影響を検討した. 1) NCTC 8798の胞子形成能はクックドミート培養(37℃,3日間)菌液に対し加熱処理(75℃,20分間)のみを加えた場合よりも凍結保存(-20°あるいは-30℃,1~6日間)後に加熱処理を加えた場合に顕著に上昇した. 2) 培養菌液を6日間凍結(-20℃)保存した場合は,1日間凍結保存した場合に比べ,加熱処理後におけるエンテロトキシン産生能,胞子および耐熱性(100℃,10分間)胞子の形成能が高かった. 3) 凍結保存(-20℃,5日間)後加熱処理によってもたらされた胞子形成能は凍結(-20℃)―融解(37℃)を凍結保存前に1回加えた場合に最大であった.凍結―融解を2および4回加えた場合にはその胞子形成能は減少した.
