Abstract: We studied the quantitative variations of fish liver fats and vitamine A at various storage temperatures and obtained the next results. (1) The decrease of vitamine A have a close relation with peroxide value; and the storage temperatures must be about-20℃ to control the variation during long storage. (2) The amount of the oxygen as well as storage temperatures has a large factor to this variation. (3) The decrease of vitamine A and increase of peroxide value probably depend on the enzymatic reactions. / (1)魚類肝臟貯藏中に於けるビタミンAの減少並びに過酸化物の増加は互に密接な關係を有し,之等の作用を抑制するには少なくとも-20℃ 前後の低温に貯藏する必要がある.なお之等の變化は貯藏温度と共に酸素量もかなりの影響を及ぼす様である.(2)抗酸化剤(B.H.A.)はビタミンAよりむしろ過酸化物價に大きな作用力を有する様に思われる. (3)サバ肝臟エステラーゼは低温に於てもかなりの活性を示し,最適pHは7.5と考えられる. (4)肝臟貯藏中に於けるビタミンAの減少及び過酸化物の増加は肝臟中の酵素様物質が作用するものと考えられる.
